🛒 Key Ingredients

- Peaches - fresh in season peaches are the star of the show, frozen or canned also work and taste delicious.
- Oats - old fashioned regular oats work best! Quick or instant oats get pretty gummy in my opinion, but you do you. I will say that if you make them overnight, be sure to use regular old fashioned.
- Plain Greek yogurt - this adds protein and makes the oats extra creamy! Cooking the oats with water rather than milk helps them cook faster, the yogurt is the best addition to make them a custard- like texture, and the cream (or milk) on top is luxurious.

- Vegan - use a non dairy yogurt and plant based milk to make the oatmeal creamy.
- Lower sugar - substitute the brown sugar for a few drops of stevia.
- Add 1-2 Tablespoons of your favorite vanilla protein powder for even more protein.
- Maple syrup, agave nectar, or honey are all fantastic natural sweeteners.

- Caramelize the peaches on the stovetop with a Tablespoon of butter for 5 minutes before adding to the oatmeal for a lovely flavor pop.
- Make it cinnamon spice! Add a pinch or two of cinnamon and nutmeg for a cozy little cinnamon peach oatmeal.

- Step 1. In a microwave safe cereal bowl, combine the oats, water, and a pinch of salt. Microwave for 2 minutes until cooked through. Watch to make sure it doesn't boil over! I like to put a plate under the bowl just in case to catch any boiled over oats. If you're doubling the recipe, just do it on the stove top, it's easier to do more oatmeal that way!

- Step 2. Add in the greek yogurt to make the oats creamy, then the vanilla, and stir well. Optional: add in 1-2 Tablespoons vanilla protein powder now too.

- Step 3. Add in your toppings! Brown sugar stirred in and/or on top, chopped peaches, and/or a lil drizzle of honey. A little bit of heavy cream or milk poured on top last is the finishing touch that makes the oatmeal LOVELY. We love to add a pat of butter, a drizzle of maple syrup, or a sprinkle of cinnamon to make them even MORE delicious.
🧑🍳 Overnight & Stovetop versions
- Overnight oats: Substitute milk for water and mix all ingredients together except peaches. Rest refrigerated overnight and serve with peaches on top. Makes a delicious breakfast, snack, or dessert!
- Stovetop: Instead of microwaving oats, cook on the stovetop and simmer for 2-3 minutes until oats are cooked through. Remove from heat and follow rest of recipe as directed. If I'm making more than one serving, I make them on the stove. I use a similar base to this one and cook it on the stove top for mango coconut oatmeal.

My husband and I LOVE this! It is easy to make and tastes so good. I cooked it on the stove and used frozen peaches in it. It will now be a regular for us. Next time I might add some ground flax seed just to add more fiber for our health. We really like your recipe for banana nut oatmeal too, but this is even better.
