It's fun to make rainbow rice krispie treats in March for St. Patricks Day, but we end up making these year round because we love them so much, just like Cookie Butter Rice Krispie Treats. There really is no seasonal constraint for these, make them when you want bestie.

These are some of the EASIEST treats to make for St. Patricks day, and they are always a huge hit with the kids. My children (and husband) love anything remotely sweet so they ate this entire pan in an afternoon.

What To Expect
- Taste: Buttery, gooey, with a pinch of salt to balance out all the sweet. (They are very fruity sweet tasting). The white chocolate drizzle on top makes them a little more fancy, especially with some fun sprinkles!
- Ease: Beginner recipe, no bake, SUPER easy.
- Time: It takes 5 minutes to whip up the rice crispy treats, then another 20-30 minutes to set.
🛒 Key Ingredients
- Fruity Pebbles - mainly an American cereal, shaped just like Rice Krispy cereal, with a fruity flavor and rainbow colors.
- Marshmallows - use mini marshmallows, they melt much quicker than the full size ones!
- Butter - I ALWAYS used salted butter in my recipes, it just tastes so much better.
- White chocolate - I use regular white chocolate chips for the chocolate drizzle, it doesn't have to be super special high quality as long as you melt them correctly!

- You could use cocoa pebbles in place of the fruity pebbles for a fun chocolate version!
- Add different colored sprinkles or melted chocolate to the top.
- Add colored marshmallows at the end for a rainbow marshmallow twist.

- Step 1. In a large pot over low/medium heat, melt butter. Remove 1 cup of marshmallows and set aside. Add remaining marshmallows to the pot of melted butter. Stir occasionally for 3-5 minutes until everything is completely melted.
- Step 2. Remove from heat and add vanilla and salt.
- Step 3. Add in fruity pebbles and carefully stir with a rubber spatula to combine everything.
- Step 4. Add the reserved cup of marshmallows. Transfer mixture to a greased 9x13 inch pan to set. Press on mixture until it's evenly distributed in the pan. You can spray your spatula with baking spray to help it not to stick to the crispy treats as you spread them flat.
- Step 5. Place the white chocolate chips into a disposable piping bag or sandwich bag, and microwave for 15-second increments until melted, mixing between each.
- Step 6. Snip the tip of the bag and drizzle white chocolate over rice crispy treats. Optional: sprinkle with fun rainbow sprinkles! Let chocolate set for at least 10 minutes before slicing.
📌 Top Tips & Hacks
- Make sure to save marshmallows to put in at the end! It makes nice little gooey marshmallow pockets throughout the rice crispy treats.
- Vanilla & a pinch of salt are a MUST with this treat.
- Use FRESH marshmallows. Or if you use older ones that are dried out use a little less cereal, the moisture content in the marshmallows makes a difference in how soft the rice krispie treats are.

You can make them up to 5 days in advance, they are best eaten within 3 days however. They can get a little stale tasting after that, unless they are frozen.
