In a microwave safe cereal bowl, combine ½ cup old fashioned oats, ¾ cup water, and a pinch of salt. Microwave for 2 minutes until cooked through. Watch to make sure it doesn't boil over!
Add in ¼ cup greek yogurt to make the oats creamy, then ½ teaspoon vanilla extract , and stir well. Optional: add in 2 Tablespoons vanilla protein powder (optional)
Add in your toppings! 1-2 Tablespoons brown sugar stirred in and/or on top, ½ cup chopped peaches, and 2 Tablespoons of real cream or milk poured on top last is the finishing touch that makes the oatmeal LOVELY. We love to add a pat of butter, a drizzle of maple syrup, or a sprinkle of cinnamon to make them even MORE delicious.

Make ahead and store refrigerated for 4-5 days. Overnight oats version: Substitute milk for water and mix all ingredients together. Rest refrigerated overnight and serve with peaches. Makes a delicious breakfast, snack, or dessert! Stovetop: Instead of microwaving oats, cook on the stovetop and simmer for 2-3 minutes until oats are cooked through. Remove from heat and follow rest of recipe as directed.
