Frozen Blueberries with Yogurt
Frozen yogurt blueberry bites are super easy to make! They are the perfect snack, nutritious, convenient, and so yummy all year round.

- 1 cup plain Greek yogurt
- 2 cups blueberries
- ¼ cup sliced almonds
- ¼ cup shredded coconut, sweetened or unsweetened
- 1 teaspoon vanilla extract
- 1-2 Tablespoons honey
- optional: 2 Tablespoons of vanilla protein powder
- 1 cup chocolate chips 185 g
- 1 Tablespoon coconut oil
In a small mixing bowl, combine the Greek yogurt, blueberries, almonds, coconut, vanilla, honey and optional protein powder in a bowl. Gently mix together so the blueberries aren't smashed.
Use a 1.5 Tablespoon cookie scoop to scoop portions onto a baking sheet lined with parchment paper. Freeze for at least 4 hours until frozen through and no longer runny. Melt the chocolate chips and coconut oil together in a microwave safe bowl for 30 second increments and stir in between until the chocolate is smooth.
Drizzle the melted chocolate over the frozen yogurt bites and cover as much as possible. Freeze for another 10-15 minutes until the chocolate is hardened.
Optionally sprinkle with coconut or almond shavings before serving. Best stored and served frozen, we like to leave them out for 5 minutes or so to soften a little before eating. Best eaten quickly so they don't melt and become runny!
Store frozen until ready to serve.
