Red Skin Mashed Potatoes

Mashed potatoes with red skin are buttery, creamy, made with 4 ingredients, and are ready in under 30 minutes! No cream needed, SUPER easy.

Ingredients

  • 3 Liters water
  • 1 teaspoon salt
  • 3 lbs red potatoes
  • cup butter 38 g
  • ½ cup whole milk
  • ½ teaspoon salt 3 g
  • optional: ½ teaspoon garlic powder

Instructions

  • In a large pot, boil water and 1 teaspoon salt over high heat.
  • Wash potatoes and scrub with a produce only brush.
  • Slice potatoes into ½ inch pieces and place in pot of boiling water. Cook for 15-20 minutes or until fork tender.
  • Remove from heat and drain all water out of potatoes.
  • Use hand held potato masher or stand mixer with paddle attachment to mash potatoes with butter.
  • Add milk and salt last, and mix well. Optional: add garlic powder and garnish with fresh parsley. Serve warm. Enjoy!

Notes

Store refrigerated for 4-5 days or freeze for up to 3 months. 
When reheating, add a couple of Tablespoons of milk to help it stay creamy.
