Red Skin Mashed Potatoes

- 3 Liters water
- 1 teaspoon salt
- 3 lbs red potatoes
- ⅓ cup butter 38 g
- ½ cup whole milk
- ½ teaspoon salt 3 g
- optional: ½ teaspoon garlic powder
In a large pot, boil water and 1 teaspoon salt over high heat.
Wash potatoes and scrub with a produce only brush.
Slice potatoes into ½ inch pieces and place in pot of boiling water. Cook for 15-20 minutes or until fork tender.
Remove from heat and drain all water out of potatoes.
Use hand held potato masher or stand mixer with paddle attachment to mash potatoes with butter.
Add milk and salt last, and mix well. Optional: add garlic powder and garnish with fresh parsley. Serve warm. Enjoy!
Store refrigerated for 4-5 days or freeze for up to 3 months.
When reheating, add a couple of Tablespoons of milk to help it stay creamy.
