Make sure your butter is softened, then mix the honey into the butter (start with less if you want it less sweet) using a fork or spoon until it's smooth and creamy, it make take a minute or two.
Add in the vanilla extract and mix it in until the butter is smooth and creamy again.Serve over warm breads, pancakes, sweet potatoes, etc. Enjoy! If the honey butter is too runny, pop it in the freezer for a few minutes to thicken it up.
Notes
Store the honey butter spread at room temperature for up to 2 days, then refrigerate for up to 1 month. Can be frozen for up to 3 months. Add more honey to make it sweeter if desired!
