In a small pot, combine the oats, water, and pinch of salt. Cook on stovetop over medium heat according to package directions - simmer about 5 minutes.

Remove from heat and add in the greek yogurt to make the oats creamy, the brown sugar, then the coconut extract. Stir well. Optional: add in 1-2 Tablespoons vanilla protein powder now too.
½ cup greek yogurt, 3 Tablespoons brown sugar, 1 teaspoon coconut extract, 1 serving vanilla protein powder
Top oatmeal with mangoes, coconut shavings and sesame seeds (optional) and drizzle with coconut milk.

Make ahead and store refrigerated for 4-5 days. Overnight oats version: Substitute milk for water and mix all ingredients together. Rest refrigerated overnight and serve with mangoes. Makes a delicious breakfast, snack, or dessert! Microwave: Combine half the oats, water, and a pinch of salt. Microwave for 2 minutes until cooked through. Watch to make sure it doesn't boil over! I like to put a plate under the bowl just in case to catch any boiled over oats.
